INGREDIENTS
Oatmeal:
1/2 cup oats (use gluten free oats for gluten free oatmeal)
3/4 cup milk of choice
1 tsp cinnamon
1/2 tsp vanilla extract
2 Tbsp almond butter
3 chopped dates (alternatively use 1 Tbsp raisins)
Apple mix:
1 apple
1 Tbsp water
1 tsp vanillin sugar (alternatively use 1 tsp sweetener of choice + 1/2 tsp vanilla extract)
1/2 tsp cinnamon
Topping:
2 Tbsp greek style plant yoghurt
INSTRUCTIONS
The Apple Mix:
Peel, core and chop one apple into small cubes, and add them to a small pan.
To the pan, add the water, vanillin sugar, and cinnamon. Cook over medium-high heat, and allow the apples to soften for about 10 minutes, stirring occasionally.
Remove the pot from the heat, and let the apple mix cool off.
The Oatmeal:
Add all Oatmeal ingredients to a small bowl, and mix to combine.
Assembly:
Add half of the apple mix to the bottom of your jar (or another serving dish).
Next add the oatmeal mix.
Next add 2 Tbsp greek style plant yoghurt.
Next add the remaining apple mix.
Sprinkle with some flaked almonds.
Cover and let it sit overnight in the fridge.
RECIPE NOTES
To make gluten free: Use gluten free oats.
To make dairy free: Use plant milk instead of cow's milk. Use plant yoghurt.
To make vegan: Use plant milk instead of cow's milk. Use plant yoghurt. Use vegan sweetener.
