These make-ahead BANANA & PEANUT BUTTER OATMEAL MUFFINS are the perfect grab-n-go breakfast choice for your busy mornings. They are simple to make (no mixer required!), naturally sweetened with bananas and agave nectar, dairy free, gluten free and loaded with dark chocolate chips. Enjoy!

INGREDIENTS
Wet ingredients:
3 eggs
1 tbsp sweetener of choice (I used agave nectar but you can substitute with maple syrup or honey)
3 mashed bananas
2 tbsp vegetable oil
3/4 cup milk (use plant milk for dairy free muffins)
2/3 cup 100% peanut butter (I prefer crunchy for this recipe, but the smooth one works too)
Dry ingredients:
3 cups oats (use GF oats for gluten free muffins)
2 tsp baking powder
1/4 teaspoon salt
1/2 tsp cinnamon
Mix-ins:
2/3 cup dairy free dark chocolate chips
INSTRUCTIONS
Preheat the oven to 180 degrees C (350 degrees F). Lightly grease a 12-cup muffin tin with butter, oil or non-stick cooking spray and set aside. If you'd like to you can use paper or silicone muffin cups for the oatmeal, so it's easier to remove the muffins from the tin.
In a large bowl, whisk together the wet ingredients.
Add dry ingredients and mix until just combined.
Fold in dark chocolate chips.
Divide oatmeal mixture between prepared muffin cup tray.
Bake muffins at 180 degrees C (350 degrees F) for 20-25 minutes or until lightly browned and firm to the touch. Cool muffins in pan for 10 minutes then transfer to a wire cooling rack. Enjoy!
RECIPE NOTES
* Muffins can be made-ahead and stored in the fridge.
* Muffins can be eaten cold or warm. If you prefer them warm simply reheat them in the microwave.
* Muffins can be frozen; individually wrap muffins in freezer bags or store them in a large freezer bag. Reheat in the microwave or simply thaw them at room temperature.
To make gluten free: Use gluten free oats.
To make dairy free: Use dairy free dark chocolate chips and plant milk instead of cow's milk.
