Frozen Blackberry and Lime Coconut Yoghurt Bars

Try our delicious FROZEN BLACKBERRY AND LIME COCONUT YOGHURT BARS. They are vegan and gluten-free, perfect as grab-and-go breakfast or a healthy dessert. They are easy to make, delicious to eat, and full of healthy ingredients. Enjoy!

 

Prep Time: 15 minutes

Freeze Time: 3 hours

Total Time: 3 hours + 15 minutes

INGREDIENTS


Base:

Top:

  • 1.5 cup coconut dairy free yoghurt

  • 1 cup blackberries - stewed and cooled

  • zest of 1 lime


INSTRUCTIONS

  1. Place coconut oil in a microwave-safe container and heat it in microwave for 15 seconds at a time, stirring in between until fully melted.

  2. Place blackberries in a saucepan and cook over low heat stirring occasionally, for 8 to 10 mins.

  3. In a food processor, blend the dates, oats, almond butter, ground flaxseed, lime zest and coconut oil until well combined.

  4. Transfer the mix to a parchment-lined baking dish and press firmly into the base of the dish.

  5. Top with the coconut yoghurt and spread out evenly.

  6. Dot the yoghurt with the stewed blackberries and use a butter knife or a toothpick to swirl.

  7. Sprinkle lime zest on top.

  8. Place into the freezer and let freeze for 3 hours, or until the bars are solid enough to cut.

  9. When removed from the freezer, cut into squares or bars of the desired size.

  10. Let thaw for a few minutes before enjoying.


RECIPE NOTES


* I don't recommend using dairy natural or greek yoghurt because it will make the bars a little bit too sour.

* Storage: Store in an airtight container in the freezer with parchment paper between cut slices of the bars to prevent them from sticking to each other.

To make gluten free: Use gluten free oats.

To make dairy free: Use dairy free yoghurt.

To make vegan: Use dairy free yoghurt.
